[Nix-dev] Turn on python3 support for vim in configuration.nix

Txs, to make it work I needed to also add lua to nixos.config and not
environment.systemPackages:

nixos.config = {
  vim.python = false;
  vim.ruby = false;
  vim.lua = false;
};

How would I know this information?
