It should be possible just by setting some environment variables. I've
never done it, but there are $NIX_STORE_DIR, $NIX_STATE_DIR, etc. See
the end of "man nix-store".

Of course, note that installing stuff to somewhere else than /nix/store
makes you build everything from scratch by yourself. Therefore, using
proot or chroot or something similar might be preferable for you...
