Good looking fonts are somewhat of a work-in-progress in NixOS. There
are some changes [1] to appear in the upcoming release (14.12) which
will make the default rendering much better and (more importantly!)
make the font rendering much easier for the user to customize. So, my
answer to you question is: wait a few weeks :)
