I've not tried dual-boot of mac os and nixos, but I have experience of
dual-booting mac os with other linux, and dual-booting nixos with
other linux on EFI. Anyway, I think it should just work. IIRC, you
need to bless the nixos kernel from mac os. You don't need another EFI
partition, nixos should put it's own kernel into existing EFI
partition, just mount it as /boot.

If you have troubles you can ask more specific questions (however I do
not have access to a mac any more).
