You can set flag choices in cabal2nix. Look at the Cabal2Nix.Flags
module. So it'd be nice if whenever you make a Haskell package change
that requires a change to Cabal2Nix, you make the change and send a
pull request.

A long time ago, I also started adding proper flag support to
cabal2nix, but I never finished it.
