Thank you Nicolas, I put

   {pkgs,...}:

on top of my configuration.nix and I changed the line

   environment = { extraPackages = pkgs: [ pkgs.emacs ]; }

with

   environment = { extraPackages = [ pkgs.emacs ]; }

and the error disappeared.
