[Nix-dev] Docker image updated for Nix 1.11

hi awesome work.

- any ideas how could we automate this? so that images get pushed
after every commit/tag to http://github.com/nixos/nix

- any particular reason that https://github.com/LnL7/nix-docker is not
using dockerTools?
