My expression relies on Debian having done one quite tedious part
(pulling the essential tarballs and repacking them together).

If you a) can provide a source of analogous tarball for TeXLive 2008 or
b) will create it and make it reside on nixos.org or c) will write an
expression producing analogous source directory by unpacking tarballs
(the main work here is collecting individual tarballs from CTAN,
actually I will accept URL list and your honest word that these are all
the tarballs needed except maybe 4) I will spend some time and effort to
upgrade and test using that source version.

Upgrade should be next-to-trivial. The expression is a lot of small
hacks to build using Nix conventions, for example we cannot just
_overwrite_ something (ls-R) in postinstall and call it a working
package. They should be version-agnostic.

I will not look for individual tarballs myself now. I understand that
grabbing the package list from TeXLive and pulling all its entries must
not be hard, but I do not see a way to cut manual labour.
