This may work. Assuming Python is in the path you can do either:

  python -c "import sys; print sys.prefix+'/include/python'+sys.version[:3]"

or 

  python -c "import sys; print '~/.nix-profile/include/include/python'+sys.version[:3]"

depending on need.
